Winnie's Ginger Nut Biscuits

Ingredients

125g butter

125g raw sugar

125g golden syrup

250g plain flour

1½ teaspoons ground ginger

1½ teaspoons bicarbonate of soda

Method

  1. In a saucepan heat butter and syrup together until melted.
  2. Sieve flour, ground ginger and bicarbonate of soda into a basin.
  3. Make a well and add melted butter and syrup.
  4. Mix together to form a firm dough.
  5. Roll into small balls (about the size of a walnut) place on a greased baking tray and press down with a fork.
  6. Bake in a hot oven for 15-20 minutes until golden brown.
  7. Leave to cool for about ten minutes before transferring to a cake rack to cool.
  8. Store in an airtight tin.
