Ingredients

5 large lemons

1kg white sugar

12g tartaric acid (approx.2 teaspoons)

12g citric acid (approx. 3 teaspoons)

6g Epsom salts (approx. 1½ teaspoons)

Juice of one orange

Method

  1. Pare thinly the skin off 4 lemons and add to the juice of the lemons and orange.
  2. Add sugar, acids, Epsom salts and pour over 850ml boiling water.
  3. Stir until sugar has dissolved.
  4. Leave overnight, strain and bottle.
  5. Keep in refrigerator and dilute to taste.
