Mrs Scattergood

Mrs. Scattergood is remembered as being a Nairobi friend of Winnie's. She was a large lady and very hospitable.

Ingredients

450g white sugar

400ml tin condensed milk

150ml cold water

125g butter

1½ tablespoons golden syrup

Vanilla essence

Method

  1. In a large saucepan, boil all ingredients together.
  2. Do not stir continuously, only enough to keep from sticking to pan.
  3. Test in a cup of cold water and when setting (210 - 220c) beat mixture with a wooden spoon until it thickens.
  4. Pour into a greased tin to cool.
  5. Cut into bite size squares.
